Roasted Garden Vegetables
Simple roasted vegetables fresh from the garden.
Preheat oven to 400°F.
Add chopped vegetables, olive oil, seasoning salt, and pepper to a mixing bowl. Stir to combine.
Pour vegetables onto a roasting pan lined with a Silpat or parchment paper. Spread them out to a single layer.
Place in the oven and roast for 15-20 minutes.
Remove from oven and stir. Return to oven and roast for another 15 - 20 minutes, until the largest pieces are fork-tender and browning on the edges.
