The Cookies that Have (Almost) Everything

Ingredients

  • 1 cups butter softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1 ½ cups all-purpose flour
  • 2 cups old-fashioned oats
  • 1/2 cup semi-sweet chocolate chips
  • 1/2 cup white chocolate chips
  • 1/2 cup toffee bits
  • 1/2 cup coconut flakes

Instructions

  • Preheat oven to 325F. Line baking sheet with a silicone mat or parchment paper.
  • Beat together butter and sugars until fluffy.
  • Add eggs, one at a time, and beat until well combined.
  • Add vanilla and mix.
  • Stir in cinnamon, salt, and baking soda.
  • Slowly mix in the flour until just combined.
  • Add the rolled oats and mix well.
  • Fold in the chips, toffee, and coconut.
  • Roll the dough into walnut-sized balls and arrange on the baking sheet. Bake for 11 minutes and allow to cool on the sheet for 5 minutes before moving to a cooling rack.
