Spaghetti is sort of a lazy, oops-I-forgot-about-dinner dinner around here. One pot spaghetti is my even lazier, let’s-save-dishes version of dinner. Using simple, affordable ingredients you can have a big family dinner ready in roughly 30 minutes, which includes the time for your liquid to boil and the prep work for your ingredients.
Now, if you’re like me you undoubtedly forgot to thaw out some ground beef which will add to your cook time. Do yourself a favor and put the meat in the fridge to thaw the night before.
If you really want to take this recipe over the top make a loaf of garlic bread from scratch to serve with it and shred some real Parmesan.
I like to chop up and add whatever veggies are kickin’ around the fridge and need to be used. This time I added in a couple of small zucchini and a diced tomato. I like to add mushrooms too. However, we have a mushroom hater who won’t eat food tainted by any sort of delicious fungus unless it’s chopped into microscopic bits.
You can use either fresh garlic and onion or be super lazy and use a dash or two of the dried powdered variety. I chop and mince fresh if I’m not too tired or running behind. Otherwise, I use the powder.
Garlic is my favorite, except for that one time where I thought putting even more in the pesto sauce would make it infinitely better. Except it didn’t. It burned, not in the scorched kind of way, but like it burned your mouth when you ate it. Lesson learned: You really CAN have too much garlic.
This is great served with freshly grated Parmesan, homemade garlic bread, and a great big salad. Maybe some wine too, although mushroom haters can keep their whine to themselves.
One Pot Beef Spaghetti
Ingredients
- 1 lb ground beef
- 1 small onion diced
- 2 cloves garlic
- 1 cup frozen spinach
- 4 oz mushrooms sliced
- 12 oz tomato paste
- 1 lb spaghetti
- 5 cups beef broth
- 2 tbsp olive oil
- Salt and Pepper to taste
- Italian Seasoning to taste
- Parmesan cheese for garnish
Instructions
- Brown ground beef. Drain.
- Add all ingredients to the pot and bring to a boil over medium heat.
- Cook for 11 -12 minutes, stirring frequently.
- Remove from heat and allow to cool for 5 to 10 minutes. Sauce will thicken as it cools.
- Serve garnished with Parmesan.
